I never used to like tomato's so much until I met my husband! These sandwiches are like your ordinary grilled cheese, but with a twist: some tomato's on top. And they are scrumptious (they're also super quick and easy for those last second dinner's.)
Grilled Cheese With Tomato's
Ingredients
6 bread slices of any kind
3 tomato's, sliced
Slices of cheese (enough to fill each sandwich)
Soft butter for spreading
Mayonnaise for spreading
Directions
Heat a skillet to medium-low heat. Slice some cheese and tomato's, set aside. Butter one side of each bread slice. Take one bread slice, butter side down, and put it on the skillet, fill with cheese, then put another bread slice with butter side up. Do the same for the other sandwich. When the bottom side is done and brown, flip the sandwich. After the sandwiches are done, put them on a plate and in a warm place to keep until they are ready to eat.
Next, with the last 2 slices of bread, place both butter side down on the skillet and let it cook until it's done. Now, spread mayonnaise over the none-fried part of the 2 slices of bread you just fried. Place sliced tomato's on top of the 2 grilled cheese sandwiches, and top with the 2 slices of bread with mayonnaise (so that the fried end is facing up and the mayonnaise side is holding the tomato's in place.) Then serve!
Makes: 2 sandwiches.
